Zacusca with salmon

From the cycle: nothing is thrown away, everything is transformed. If it wasn't eaten on the grill, it turned into a zacusca :)
- 3 slices of grilled salmon
- A bunch of green onions
- a cup of oil
- 5-6 baked red peppers
- a box of tomatoes in broth
- 400 ml of thicker tomato juice
Preparation time: over 120 minutes
RECIPE PREPARATION Zacusca with salmon:
Chop the green onion as small as possible and fry in oil. When ready, add the diced roasted peppers. Let it boil for 10 minutes and add the minced fish and clean the bones. After 10 minutes, add the diced tomatoes and the tomato juice.
Boil covered with a lid until it drops and becomes bound. Season with salt and add the spices (I put spices for the fish). Leave it for about 10 minutes and put it in jars.
Boil the jars in a bain-marie until the lid swells (at least an hour). Leave to cool and then store in the pantry.
I got 4 jars, but I also left them to serve in a bowl.
